In this short "Between the Fires" micro-episode, we’re tackling a common hurdle in the BBQ community: the belief that you need specific, high-end equipment to achieve great results. Whether you’re working with a Big Green Egg, a pellet grill, a Weber kettle, or even a budget-friendly charcoal setup, the principles of good barbecue remain the same.

It’s not about the brand or the price tag; it’s about understanding your fire and your meat. So fire up what you’ve got, and let’s get cooking!

Happy Friday. This is another episode of Between the Fires. This is the episodes that come out on Wednesdays and Fridays, and they're just a small topic, a short micro episode where I simply come on real quickly and dive into one topic of some sort between the fires. Sometimes it's not even very much barbecue related, but this one is. And all I want to do is real briefly talk about the type of grill you have. And I have heard some people say in the community that they don't have a big green egg, so they can't cook that. Or they don't have a pit barrel cooker, so they can't do ribs like that. Or whatever it is, maybe they see someone cook something on this nice, magnificent offset. Oh, I don't have that. What do they have, you ask? One person was like, I've just got a pellet grill. Someone else I've seen in there says I only have a Weber kettle. Hey, if you have that$30 grill, well, I don't know if you can get a$30 grill anymore. Even the lower end ones may be$50, but if you have that lower end grill and that's all you have, use it. You can cook whatever you want on that grill, but you can fit on that grill. You can char burgers, you can char steak, and you can even smoke. You can smoke a roast on there. You can smoke on that thing too. You just have to position your charcoal in a certain way. Maybe on one side, cook on the other so you get indirect heat. Maybe you use the snake method so that you cook it slowly going around. And then the other thing is if you have a pellet grill, I love my pellet grill. I've got multiple grills for those of you that don't know. I've got a pit boss pellet grill, and it don't have to be pit boss, it could be any brand. I've got a uh the big green egg, I've got the mini, the mini max, which is the 12-inch. I've also uh got the pit barrel cooker, and I do have a Weber kettle. So I have several different cookers as well. Um the one I do use most of the time is the big green egg in the pit in the uh pellet grill. Uh when it comes to cooking a pork shoulder, I'm on the pellet grill. I'm all about the pellet grill. You can set that thing to 180 to 200 degrees, let that thing cook overnight, monitor it, make sure you got plenty of pellets, make sure the power doesn't go out. Those are a few of the factors that are the cons on it. If you lose power, most pellet grills will not restart, even if it's just a quick surge, it'll usually cut it off. You've got to turn it back on. Kind of like uh, you know, a computer, because it's a computer, so that it shuts off, it comes back on and don't turn on automatically. Uh but once you, you know, make sure you've got it on, you can cook some amazing things on that. And you can get some amazing smoke on that. I've seen so many people say a pellet grill is not really a smoker, or a pellet grill is is not really smoking meat. That that's uh cheating. No, it is not. You can actually use pellet grills now in most championship cooks. You don't see very many people do it, but it has happened. There have been winners in championship cooks using a pellet grill while other people used other methods. It's not what you have, it's how you use what you have. And once you figure that out, you can cook everything. The profile, the flavor may be slightly different. The bark may be a little less or more, uh, various uh uh uh time links, char and various things could be a little different. Uh one thing about the pellegrill, though, is you don't have to, you know, once you set it, it just cooks at the steady temperature the whole way through, you kind of set it and forget it. So is the pit barrel cooker, you kind of set it and forget it. So if all you have is the pit barrel cooker, you can cook everything in it. So I'm just wanted to come out there today, wish everybody a happy Friday, and don't sweat what grill you have. And if you see someone cooking something on a grill you don't have, and maybe you only have a pellet grill, maybe you only have a Weber kettle, you can still master the cook you're watching. You may have to cook it slightly different. There may be some more steps involved. If it don't fit, maybe you need a smaller one if you get a smaller drill, but you can still cook it. If one has a water pan and you don't have one, add one if that's what you want to do. If you can't fit it, you don't need it. You can spritz, you can mop, you can do all these things. The main thing is prepping your meat, and once you prep your meat, season it. And once you season it, get the fire going. It doesn't matter what you're cooking on. So what are some of the uh devices that you can cook with just about anything? Everything. Pellet grill, you can cook about everything. Uh Weber, you can cook about everything. Weber Smoky Mountain, you can cook about everything. Now there are some exceptions to this. For example, uh the Weber Smoky Mountain may not be great for searing, and maybe your pellet grill does not have a way to sear. So uh that could be a little bit of a setback on those, but you can definitely smoke just about anything with any of those grills, so quit letting it bother you. Don't also believe yours is the only way it can be done. Cook it how you like it. Barbecue. Barbecue is different for every person. Barbecue can be cooked hundreds of different ways in hundreds of different cookers. So don't worry about what you have. Have a happy Friday. Welcome back to the Oki Smoking Podcast.
