Dolores:

Hello, just fine.

Time to fire up that grill. From smoked pork to smash burgers, outdoor cooking just tastes better. This is the Okie Smokin Podcast, and here's your host, John Berry.

John:

We're going to be talking this season about desserts. For this entire season we've got about eight episodes lined up, so for a couple of months we're going to be diving into a dessert. Now, this come about in November of this year on our YouTube channel, the Oki Smoking YouTube channel, I did a series of pies. I did four of them and you know, I thought it would be a great way to kick off this podcast and let's just talk about desserts quite frequently for every episode of season one. That's what we're going to be doing here. So this is season one, episode one. This is the season premiere of the Oki Smoking Podcast. So thank you for joining us. Today Should be fun. We're going to be going over some desserts that we have done. We're also going to be answering some questions and looking at some comments that were made later in this episode, and Dolores is also going to speak to us about a keto a little bit later in this podcast as well. Are you ready for that?

Dolores:

Yeah.

John:

Well, what is your favorite? Keto dessert.

Dolores:

My favorite keto dessert Well yeah, do you have one? Right here.

John:

And what is that? Oh, it's their birthday cake cookies.

Dolores:

It has almond flour.

John:

It's my birthday cake cookies that now you got those from. Where did you get those?

Dolores:

from all these.

John:

Oh, from all these. Yeah, they have a lot of different snacks and things. There. Don't think that you like a birthday cake, chocolate chip and some other things, so she likes to get a lot of them snacks, and yeah, so my favorite is by Quest, the peanut butter cups. That's only one carb and have you tried grilling any yet? Maybe a keto dessert on the grill?

Dolores:

No, not yet. You're supposed to do that no not yet. I try a cheesecake.

John:

We got to talk to you a little more about the keto a little later in this podcast, so stick around for that, but we're just going to go ahead and dive right in. So we do cook on various grills outside. I've got a blackstone and I've got a pit barrel. We also got a Weber Smoky Mountain, and I have cooked a dessert on all three of those, so each one kind of has its own little uniqueness to it. The blackstone, of course, is more for grilling, and then you got the pit barrel, which I think cooks at a lot higher temperature, and then you've got the Weber Smoky Mountain, which will cook a little bit low and slow. So, and then of course, we got the pellet grill as well. So we do have all three or three or four different ways that we do cook desserts out there on that out in the backyard. And if you listen to our trailer or our last podcast, you probably know what pie we cooked in November was our favorite, which was that was the apple pie, wasn't?

Dolores:

it. Yes, it was very good.

John:

Now, it wasn't keto, but she went ahead and tried it and you did enjoy that one. But let me just go ahead and explore the different grills that we do have. I done mentioned, I think, most of them, but we're going to have the pit barrel cooker and we're going to be talking later in this season. We're going to have an episode dedicated to the pit barrel cooker, as well as the Weber Smoky Mountain, the pellet grill, which is the Pit Boss Lightning Onyx and that one I have not yet made a dessert on. That's the newest grill I have, so we're going to have to make one and discuss that when we get to that episode and find something that we can cook on that. What do you think we should try on that? Something new that we haven't yet tried? Do you get any ideas? Maybe keto, maybe not.

Dolores:

The coconut cream meringue pie. Try that.

John:

Okay, coconut.

Dolores:

Either that or cheesecake.

John:

Cheesecake. So if we smoke one of those, we're going to have to smoke it at an extra low the real low temperature or something you think so that it doesn't melt the. I mean we could drop that thing down to about.

Dolores:

On the coconut one.

John:

I just put it down to about 180 degrees, just where it's barely warm, and just put that smoke on it for a while and instead of cooking it, you know, and see how that works. I think that because that'll go to 180 degrees, which is just at a warm stage, you know, that's just kind of a keep warm temperature. So it'll be interesting we could try that and see how that works. So Now, when we get to our pellet grill episode, which will be coming up this season, we're going to do that. She said coconut meringue smoked pie. We'll do that and see how that turns out. So you'll have to jump in on that episode so you will be able to find out how that turns out.

Dolores:

Oh, we're also going to do a cake, remember.

John:

Yes, we will be doing a cake. We haven't done a cake yet and I don't know which one do you think will be best for the cake. Is that something we need to cook at a pretty high temperature? You know the pit barrel well. We can really get any of them pretty warm. We could get that pellet smoker up to 350 degrees and it would hold steady. Is that about what the temperature is? You think we need to cook that at?

Dolores:

Yeah.

John:

Or maybe 400 degrees. Yes, yes, I so yeah, what kind of cake do you think we're well, what are you thinking? Chocolate, strawberry, vanilla, what, what, what kind of cake are we going to do?

Dolores:

Let's say chocolate.

John:

Have any idea.

Dolores:

Chocolate.

John:

Chocolate. We could do a chocolate cake, upside down cake or just a standard cake.

Dolores:

What's upside down cake.

John:

I don't know. I thought, ain't there one that you kind of cook upside down, or am I just? I'm not the baker.

Dolores:

I have no clue. I'd do the meats. There's a pineapple upside down cake.

John:

Oh, that's what it was. We wouldn't be doing that on it, we can Eventually.

Dolores:

I think that would taste really good Smoked.

John:

Smoked pineapple cake.

Dolores:

Upside down cake. Yeah.

John:

Pineapple pineapple upside down cake. That would be something worth trying to. Yeah, I think that would be pretty, pretty good. Now we also have done some cookies. Now we did these my grandson wanted some cookies and these we just got out of a package and just put them on the. What did we cook that on? It seems like we cooked that on the pit barrel down, you guys did.

John:

And the barrel cooker and we just put them on there and for about 10 or 15 minutes those turned out excellent. A smoked cookies. It really added a good flavor to the chocolate chips and it really came out great. Browned them real well and everything. So really did enjoy the chocolate chip cookies that we did. Have we tried peanut butter? There's just all I'm just thinking we could. I didn't get to try any of them. Yeah, so that'll be something that we could also try some peanut butter. What about oatmeal?

Dolores:

Yeah, that'd be good.

John:

Yeah, make some oatmeal cookies. We're just kind of lining up what we're going to be trying through our future episodes in this season premiere episode, kind of giving you a feel of what all we have planned coming up.

Dolores:

We could also do like a brownie with cookie.

John:

Brownies would be good.

Dolores:

Haven't done a brownie yet yeah, with some cookie in it.

John:

Yeah.

Dolores:

That'd be good Right.

John:

And so we're probably going to. Of course, we do have the Oki Smoke and YouTube channel and some of these things that we try for the first time that we haven't done. We will also be filming, so you'll be able to find them. We might as well go ahead and film them. Put them out on YouTube, come on here, discuss what all we, how it all came out and everything, talk about it and then have a video on it as well and put them on YouTube. Tiktok. I think that'll be a pretty fun thing to do.

Dolores:

Well, you know, I've been watching some of your TikToks and all that stuff and you know a lot of people have questions or stuff like that you want to see.

John:

Yeah, what are some of the questions that they have?

Dolores:

So a girl named Marianne Marianne, I mean on one of your TikToks. She asked about the pit boss, the pellet girl, and she said is there any cons so far on it? Because every time she goes to the website there's negative comments.

John:

Well, I haven't had it very long, I've only had it. What have I? Even had it a month, yet Three weeks.

Dolores:

Yeah, three weeks about.

John:

But yeah, I haven't had any. I can't really think of any cons yet. It's worked great.

Dolores:

That's easy.

John:

It might cook. Yeah, it's easy. I've had no trouble lighting it. I primed it. I think it's worked excellent. It might run a little hot or maybe a little cool. You know the weather and that type of thing, but no, I would say no cons so far. As she said, so far, no cons. So no, it's been running quite well.

Dolores:

Yeah.

John:

What else you got?

Dolores:

Another person said that they just got theirs and they love it and they bought it for their son too.

John:

So there's a positive review.

Dolores:

Yeah.

John:

That's of course not on their website or wherever, but right there on the TikTok, that's on our TikTok, right.

Dolores:

Yeah.

John:

So yeah, so there's a positive review.

Dolores:

Then, Robert, he said on your bacon cheeseburger, done right video. He said that you need some mushrooms on that.

John:

I remember saying that comment and I did write back to him. I can't remember what it is. I wrote, I think I said that would be an excellent topping or something like that. So he nailed it. He nailed it yeah. I'm going to do an excellent on that. I'm going to redo it and throw some mushrooms, grilled mushrooms and onions.

Dolores:

Yeah, oh yeah.

John:

Oh yeah, that's what it was missing. He got that right.

Dolores:

Right.

John:

He dang sure got that right.

Dolores:

And then the last one is from Dean. He watched your smoke pumpkin pie on your smoky Weber, on your Weber smoky mountain. He said that he does sweet potato pie and pecan pies but he's never tried it with the on cooked crust. He asked if he's never he asked if he thought it first, like thought it out.

John:

Okay. So when I cooked the pies, I did not pre-cook it, the crust, on any of the pies that I did, except I did pre-cook it on the one that I made the Oreos, the Oreo crust. But that was just for a brief, what I cook at five, 10 minutes. But no, I didn't pre-cooking the crust, because now, if that's your preference, there's nothing wrong with pre-cooking it If that's what you want to do. But you got to be careful when you're cooking over this fire that you don't overcook the crust. And the temperatures I'm cooking these pies at are well, hot enough that it's not necessary really to cook it in advance. It's going to get hot enough that crust is going to get, is going to cook at the same time as the pie, especially if it's something you're going to be cooking for. Shoot, some of these pies. We cooked that apple pie, I think, an hour.

Dolores:

The apple pie was really good and the crust was good. Now the pecan pie, the crust was not that great. Thank you for watching. We overcooked that.

John:

Yeah, I did overcook that and I think what I should have done is put some foil over it, over the crust or the corners of it, you know, maybe wrap it around it after it had been cooking for about I don't know, 15 to 20 minutes, kind of got a little golden brown and put that over Because I think the fire was just getting to it just too much and it really was overcooked. So the center part was good, but some of the crust was burnt on that pecan pie, unfortunately, you could definitely tell. So we kind of ate the center of it more than the outer part. So, but yeah, no, and I didn't. You said the thaw it. No, I didn't thaw. Well, I mean it probably because I take the pie crust out while I'm preparing everything, so it may have been setting out a while. So it wasn't 100% frozen, you know it was, it was partially thawed, I would say by the time that I added all the ingredients to it. Yeah, so no, no, thaw, no, pre-cooked.

John:

Now, if it was something I was going to cook short term, I probably would go ahead and get the crust cooked and if it was like that one pie that we really didn't cook the pie, of course we used Oreo cookies, so it wasn't really necessary. You have to check that video out, but it was. We just crunched up some Oreo cookies, layered it down. I think I used about how many cookies do I use 22, 24, like two dozen of them and with some melted butter, that turned out great. That was an excellent crust. You could make a, I think a cheesecake with that would be good Probably.

Dolores:

I didn't get to try it.

John:

Yeah, yeah, you could put that cheesecake all down up on the morioles and I bet that would be awesome, so that that Oreo crust was just something I decided to do. You could use graham crackers, but I wanted to try that and I think it was. It was fire. It was really, really good. But you got any other questions, any other comments? No, no, not at this moment. So, before we wind up this podcast episode one, would you like to go ahead and talk to them a little bit about your journey in keto and how long have you been on it and what have been, or just how long have you have you been on keto? Just for those, there's gotta be some people that may be thinking about doing this or it may interest them.

Dolores:

I started in 2020 in June.

John:

June of 2020 and this episode's dropping December 18th of 2023. So you're three, almost three and a half years.

Dolores:

Yes, and in the beginning I weighed at 245.8 pounds.

John:

And now I mean and what do you weigh?

Dolores:

I weigh now like 170. Like I gained weight Last year, I was 155, so I put on a couple of pounds because you know I went on vacation so I cheated.

John:

Okay, and for someone that would be interested in doing keto, what would you say is one of your. What's the biggest struggle that you have with it?

Dolores:

My biggest struggle is like sweets and stuff, because I always crave sweets, like I always want a sweet yeah.

John:

Now I was listening to an interview on the radio station about a week ago and a doctor was talking about keto and they said that once you get sugar out of your system, you don't crave it. You won't crave it as much.

Dolores:

That is not true Would?

John:

you agree or disagree with that I disagree on that. You don't agree with that. No, yeah, have you heard? Have you heard of some of them talk about that?

Dolores:

Yes, I have. They said you got to get it out of your system. Maybe it's because I'm lazy keto, I'm not like full on, you know, could be. Yeah, you kind of are not, you will go with the car or some things like that, like you know, If something is not supposed to be in keto, you may still have it if it's within your car. Yeah, because I have cheat days, so yeah, yeah. But I'm not cheating until Christmas.

John:

Oh, you're going to go ahead and stay strict until Christmas, and then you can try all the good stuff.

Dolores:

And then I'll be back on keto again, but I mean, I have dropped a lot of weight though, because I was like a size 24 and now I'm a size eight, so that's good.

John:

Wow, yeah, that's real good. And is keto something you would see long term? I mean, you're three and a half years, that's. You enjoy it. Another three and a half years, you think? Mm-hmm, easy, you're just going to continue on it yeah. You did do better than me. I made what I made five days.

Dolores:

So John's the one that got me on to keto, you know, and he's like let's do keto together, you know we'll lose weight together and I was like okay. I'm good, I'm good on that. He lasted a week, dude. He lasted a week.

John:

Yeah.

Dolores:

Only a week, yeah, and I've lasted so long, like I'm surprised on me because I thought I was going to be the one that couldn't do it. But he likes his beer though.

John:

Yeah, that's a problem, you know you can't have. Well, I won't say you can't have beer on keto, you can't have good beer. I mean you can have something that tastes like you're drinking water down there. No Something. I like beer, but she does have some. Well, what's that? One brand that you like? Croker Croker and marker Croker. Croker and marker Croker and marker, croker and marker no-transcript.

John:

Crocker and Mark are okay. Yeah, so you do get those, and those are extremely low carbs and those don't seem to affect you too much Like one to two carbs on the alcohol in it. Now I've also heard that sometimes even a low carb alcoholic drink can bounce you right out of keto. You haven't really experienced that.

Dolores:

To make sure that it doesn't have a lot of sugars in it.

John:

You got to really look at it. It's not just the carbs, it's some of the other ingredients as well.

Dolores:

Yeah.

John:

It's got. There's a cause. You're a. You could also drink diet soda and that type of thing.

Dolores:

Yes, I drink the zero.

John:

But now, why do you drink the zeroes and not the regular diets?

Dolores:

Cause I think the zeroes taste better than the diet ones. Like the zero I thought there was might be also a special ingredient that you no. I have no clue, yeah.

John:

But anyway, we just wanted to talk to you or thought I'd let you share your keto story with them, and she'll be talking throughout the season and other seasons as well, and from time to time can jump in there and tell us what some of the keto things she's done.

Dolores:

And if I drop, if I drop more weight, I'll let you know.

John:

Yeah, maybe she'll. She'll give us an update and look and try a keto dessert too this season and see how that. See how that turns out. I bet it'll turn out real well.

Dolores:

Hopefully it does, cause I mean, the keto box cakes are kind of like they. They don't take straight to me, they're kind of watery.

John:

Yeah, yeah, yeah. For me a lot of that keto stuff don't take right. But I guess once you're on it a while it tastes good for you. So each episode, I'll go ahead and talk about a couple videos, or at least one if I've. If that, if I've dropped a video within the last week or so, we'll go ahead and talk about it as well. And I did just release a smoked, some smoked chili. Now I can add and of course you didn't try this did you.

Dolores:

It smelled like that Because it was a keto and you weren't.

John:

you didn't want to try this one, but yeah, this, this was really really good. I mean I you could check the video out. It was released December 7th, so it's the last full video. There's some shorts on there, but it was. It was really good. I I just put about a pound of hamburger meat in there through a some. I was going to throw garlic powder, but I forgot the garlic powder. But I put the chili powder, cayenne pepper, a salt pepper, just just a bunch of seasonings in there and cook that on the pellet grill with some tomato sauce, some tomato paste, brought it up to a boil and then dropped it down to 200 and let that simmer under that smoke for about, I think about 30 minutes and it thickened up and whoa, let me tell you that was some good, good chili and that was one of the best chilies I've made, and quick. Less than an hour that thing was ready to eat, and so that's the latest video on the YouTube channel. I'll rewatch those kind of fresh it up and talk about how those came out and give you an idea on how well the pit barrel cooker does with desserts.
